I GREW UP IN A GARDEN. I RUN MY BISTRO THE SAME WAY.
My grandfather farmed the same soil for forty years. He kept his rows straight, his harvest seasonal, and his kitchen table open to everyone. No hidden ingredients, no mass-produced shortcuts, just honest food. When I opened The Green Fork Bistro, I decided our dining room would feel just like that: fresh produce, sustainable meats, and a guest leaving knowing exactly where their meal came from.
City dining often feels like a performance — white tablecloths, complex menus, and glossy marketing that hides the source of the ingredients. We don't do performance. We do open kitchens, seasonal transparency, and a team that knows every local farmer by name. We believe the best meal is the one that respects the earth.
